Lemongrass and ginger tea

This tea will warm the cockles of your heart on those chilly mornings that we have been experiencing of late. Tis also delish!

1 stalk of lemongrass, cut into 3cm pieces
3cm of ginger, sliced finely
6 cups water
2 tbsp honey (optional)

Place the lemongrass and ginger in a saucepan with the water. Bring to the boil and simmer gently for 5 minutes. Strain and serve with honey if too pungent. Another option is to add a clove of garlic to ward off colds and flu, and gargle.

Makes 5 cups.
